Mediterranean Quinoa Salad

Ingredients

For the salad:ย 

2 cups cooked quinoa

4 persian cucumbers, dicedย 

3 roma tomatoes, seeded and diced

1 can chickpeas, drained and rinsed

ยฝ small red onion, dicedย 

Handful of olives, choppedย 

Handful fresh herbs (basil, parsley and/or dill)

1 Avocado, sliced, for topping

For the dressing:

1 lemon, squeezedย 

3 tbspย SRยฎ Organic MCT Oil

3 tbsp balsamic vinegar

Sea salt and ground black pepper, to tasteย 

Lemon zest

Instructions

  1. Prepare quinoa by following the package instructions. Set aside to cool.ย 
  2. Forย the dressing, add all ingredients to a small bowl and whisk together until combined thoroughly and keep cool in the refrigerator.ย 
  3. Prepare the remaining vegetables, beans and herbs.ย 
  4. Add the salad ingredients to a large salad bowl.ย 
  5. Pour the dressing over the salad and toss until well-combined.ย 
  6. Serve with avocado and/or your favorite protein and enjoy!
