Cantaloupe Salad
Cantaloupe is 90%ย water, meaningย it's very hydrating. It's also packed with Vitamin C - a powerful antioxidant that is vital in collagen synthesis.ย
For the Salad:
1 large Cantaloupe, cut into cubes
1/2 a Cucumber, thinly sliced
1/4 c Fresh Mint leaves, torn or thinly sliced
1/4 c Fresh Basil leaves, torn to thinly sliced
2 large handfuls Raspberries
For the Dressing:
2 tbsp SRยฎ Organic MCT Oil
2 tbsp Lemon Juice
1 tbsp Honey
Salt, to taste
Instructions
Combine all the ingredients for the salad in a large bowl. In a small bowl, whisk together the ingredients for the dressing. Taste and add more salt or lemon as needed. Drizzle over the salad and toss to combine. Enjoy!

1/2 Avocado
1/2 Lemon, juiced
1/4 c Coconut Cream
Pinch of salt
Instructions
For the sauce, combine all ingredients into a food processor or blender and blend until smooth.ย
Heat a non-stick pan to medium low heat and add hearts of palm pasta. Cook the pasta for about 3-4 minutes. Add the sauce in increments and stir to combine until heated through. Plate and top with seared salmon. Enjoy!
